Ingredients

  • 1 c
    uncooked pearl barley
  • 1 1/2 c
    v-8 vegetable juice
  • 1/2 tsp
    salt
  • 1/4 tsp
    pepper
  • 2 medium
    stalks celery, sliced
  • 1 medium
    bell pepper, chopped
  • 1 medium
    onion, chopped
  • 1 can(s)
    (14-1/2 oz.) ready-to-serve vegetable broth (or chicken broth)
  • 4 medium
    green onions, sliced
  • 1/3 c
    pine nuts, toasted

How to Make BARLEY-PINE NUT CASSEROLE

Step-by-Step

  1. Mix all ingredients except green onions and nuts in a 4- to 6-qt. slow cooker.
  2. Cover and cook on LOW setting for 6-8 hours or until barley is tender. Stir in green onions and nuts.
  3. To toast pine nuts: Put the nuts in a dry skillet and cook over medium-low heat, stirring frequently, until golden in spots, about 3 minutes
