Ingredients
- 1 cup uncooked pearl barley
- 1 1/2 cups v-8 vegetable juice
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 medium stalks celery, sliced
- 1 medium bell pepper, chopped
- 1 medium onion, chopped
- 1 can (14-1/2 oz.) ready-to-serve vegetable broth (or chicken broth)
- 4 medium green onions, sliced
- 1/3 cup pine nuts, toasted
How To Make barley-pine nut casserole

Step 1Mix all ingredients except green onions and nuts in a 4- to 6-qt. slow cooker.

Step 2Cover and cook on LOW setting for 6-8 hours or until barley is tender. Stir in green onions and nuts.

Step 3To toast pine nuts: Put the nuts in a dry skillet and cook over medium-low heat, stirring frequently, until golden in spots, about 3 minutes
