Ingredients

  • 1 cup uncooked pearl barley
  • 1 1/2 cups v-8 vegetable juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 medium stalks celery, sliced
  • 1 medium bell pepper, chopped
  • 1 medium onion, chopped
  • 1 can (14-1/2 oz.) ready-to-serve vegetable broth (or chicken broth)
  • 4 medium green onions, sliced
  • 1/3 cup pine nuts, toasted

How To Make barley-pine nut casserole

  • Step 1
    Mix all ingredients except green onions and nuts in a 4- to 6-qt. slow cooker.
  • Step 2
    Cover and cook on LOW setting for 6-8 hours or until barley is tender. Stir in green onions and nuts.
  • Step 3
    To toast pine nuts: Put the nuts in a dry skillet and cook over medium-low heat, stirring frequently, until golden in spots, about 3 minutes
