BARLEY-PINE NUT CASSEROLE
1 cuncooked pearl barley
1 1/2 cv-8 vegetable juice
2 mediumstalks celery, sliced
1 mediumbell pepper, chopped
1 mediumonion, chopped
1 can(s)(14-1/2 oz.) ready-to-serve vegetable broth (or chicken broth)
4 mediumgreen onions, sliced
1/3 cpine nuts, toasted
How to Make BARLEY-PINE NUT CASSEROLE
- Mix all ingredients except green onions and nuts in a 4- to 6-qt. slow cooker.
- Cover and cook on LOW setting for 6-8 hours or until barley is tender. Stir in green onions and nuts.
- To toast pine nuts: Put the nuts in a dry skillet and cook over medium-low heat, stirring frequently, until golden in spots, about 3 minutes
