uncooked pearl barley
1 1/2 c
v-8 vegetable juice
1/2 tsp
salt
1/4 tsp
pepper
2 medium
stalks celery, sliced
1 medium
bell pepper, chopped
1 medium
onion, chopped
1 can(s)
(14-1/2 oz.) ready-to-serve vegetable broth (or chicken broth)
4 medium
green onions, sliced
1/3 c
pine nuts, toasted

How to Make BARLEY-PINE NUT CASSEROLE

Step-by-Step

  • 1Mix all ingredients except green onions and nuts in a 4- to 6-qt. slow cooker.
  • 2Cover and cook on LOW setting for 6-8 hours or until barley is tender. Stir in green onions and nuts.
  • 3To toast pine nuts: Put the nuts in a dry skillet and cook over medium-low heat, stirring frequently, until golden in spots, about 3 minutes
