Asparagus and lemon are perfect combinations in this delicious vegetable side dish.

  • 2 pkg
    10-oz. packages frozen asparagus, cooked in 1/2 cup boiling water for 5 minutes and drained
  • 1 Tbsp
    butter, melted
  • 1/2 c
    nonfat yogurt
  • 3 Tbsp
    fresh lemon juice
  • 1/4 c
    chives, chopped
  • 2 Tbsp
  • 2 Tbsp
    parmesan cheese

How to Make Asparagus with Yogurt, Lemon & Chives


  1. Arrange cooked asparagus in a shallow baking dish and brush with melted butter.
  2. Stir together the yogurt, chives and lemon juice and spread over the asparagus.
  3. Combine crumbs and parmesan cheese and sprinkle on top. Bake at 350 degrees for 15 minutes or until heated through. Broil for a few seconds to brown the crumbs and serve at once.
