This recipe is one I got from my Aunt Becki. She makes this one for Christmas Dinner. I like it best with Easter Dinner to accompany ham!

green onions, chopped

grated cheddar cheese

How to Make Baked Potato Casserole


  • 1Skin boiled potatoes and chill.
  • 2Grate potatoes into large bowl. Add 1 cup cheddar, sour cream, salt and pepper. Stir to combine and put in casserole dish. Top with remaining cheddar and onion.
  • 3Bake covered at 350 degrees for 40 minutes.
