tony's puerto rican rice & beans
My son in law, who is from peurto rico gave me this recipe and told me this is how they make the rice and beans in puerto rico. I love it with pan fried chicken.

Ingredients
- 1 tablespoon vegetable oil
- 1/4 cup tomato sauce, no-salt added
- 2 tablespoons goya sofrito sauce
- 1 package goys sazon seasoning
- 1/4 teaspoon pepper
- 2 cups goya canned pink beans, drained
- 2 tablespoons vegetable oil
- 3 cups water
- 1 teaspoon salt
- 2 cups uncooked goya white rice
How To Make tony's puerto rican rice & beans

Step 1For bean sauce: Heat oil in lg saucepan over low heat. Add tomato sauce, sofrito, sazon and peppr. Cook, stirring for about 3 mins. Stir in beans, Increase heat to medium and cook 15 mins, or until sauce has thickened.

Step 2For rice: Bring vegetable oil, water and salt to a boil in a lg saucepan over high heat. Add rice and cook until water has just about cooked out.

Step 3Reduce heat to med-low. Stir. Cover, cook until all water is gone. Stir again and serve sauce over rice. Some of the bottom of the rice will be crunchy, that's okay.
