lemon-lime rice
This is my all-time favorite rice dish. It's really easy to prepare and it goes quite well with a variety of different main dishes. But my preference is to serve it with baked chicken breasts with a tangy lime sauce, such as Lime Sauced Chicken.

Ingredients
- 2 cups white rice (basmati is a nice choice, but any white rice is ok)
- 4 cups boiling water
- 1 tablespoon butter
- 1 tablespoon chopped fresh herbs (good choices are basil, rosemary, oregano, parsley, cilantro, thyme)
- 1 1/2 teaspoons grated lemon zest
- 1 1/2 teaspoons grated lime zest
- 1/2 teaspoon salt
- 1/2 teaspoon lime juice
How To Make lemon-lime rice

Step 1Cook rice for 5 minutes in a saucepan with briskly boiling water and butter, stirring once. Cover the pan, turn the heat off, but leave the pan on the burner undisturbed for 15-20 minutes.

Step 2After the rice has absorbed the liquid and is light and fluffy, add the selected herb (or herbs), lemon zest, lime zest, salt, and lime juice. Stir well.

Step 3Serve warm.
