II had a dish like this in a restaurant in New Haven,CT. I have no idea how they made the dish. I decided to get in the kitchen, and experiment. This came out even more savory,and delicious than the dish I remember. It was a big hit at my dinner table. I will continue making this dish again and again.

Ingredients For garlic bacon herb potatoes & green beans • (nor's)

  • 1 lb
    baby yukon gold or regular yukon gold potatoes ( i used baby yukon gold)
  • 1/2
    vahdalia onion chopped
  • 4-5 clove
    chopped garlic
  • 12 oz
    fresh green beans
  • 6
    slices of bacon fried crisp and crumbled
  • 1/3 c
    white wine ( i used cooking white wine)
  • 3/4 tsp
    dried thyme
  • 1/2 tsp
    garlic salt
  • 1/2 tsp
    black pepper
  • 1/4 tsp
    red pepper flakes
  • 1/2 tsp
    paprika
  • 1/4 tsp
    nutmeg

    Rinse and dry the potatoes. If using baby potatoes as pictured. Cut them in half after rinsing. If using regular Yukon Gold potatoes. Cut each potato in to 6 pieces. ( I used baby Yukon Gold)

    Place a small bowl of water about 2 cups in the microwave. Cook on high until boiling. Place potatoes in a separate bowl. Place in microwave along with the bowl the water. Set microwave to high and cook about 12 minutes. The bowl of water will steam them.

    Mean while cook the bacon until crisp. Remove bacon from drippings and set aside. Add to the pan with the bacon drippings the chopped union. Cook until translucent. Add the garlic,and cook 30 seconds.

    Add the potatoes,Green beans and all seasoning to pan. Add the white wine,and crumbled crisp bacon. Saute for a few minutes on high heat. Reduce heat to medium and cover Potato,and bean mixture. Cook for about 10 minutes,or until beans are cooked through,

    Reduce heat and keep on warm covered ( Note: The longer they sit. The tastier they get)I let them sit on low about 20 minutes. Toss real well before serving! Enjoy!!
