- 4 large potatoes (peeled and chunked)
- 3 large garlic cloves
- 1 teaspoon salt
- 2 tablespoons soft butter( unsalted)
- 1 tablespoon sour cream
- 3/4 cup fresh spinach (chopped)

Step 1In a saucepan boil potatoes and whole garlic and salt till done.

Step 2drain water add butter and sour cream, mash till creamy.

Step 3stir in spinach, sprinkle with parmigiano reggiano. Serve as a side or topping.
