Ingredients
- 4 - medium yukon gold potatoes, peeled and sliced very thin
- 2 tablespoons butter
- 2 tablespoons a.p. flour
- 1 cup milk
- 1 cup shredded cheddar cheese (we use tillamook!)
- 1/2 teaspoon salt
- - pepper, to taste
- dash cayenne pepper
- dash paprika
- - a little extra shredded cheddar cheese on top only makes it better
How To Make scalloped potatoes au gratin

Step 1Note: You can parboil potatoes if in a hurry.

Step 2Place half the potato slices in 1 1/2 qt. greased baking dish. Sprinkle a little pepper on top of slices.

Step 3Make a roux from the butter and flour. Whisk constantly, until smooth. Add cayenne pepper, salt, and cheddar cheese. When cheese is melted, pour HALF the sauce over potatoes.

Step 4Add second layer of potatoes. Top with remaining cheese sauce. Sprinkle with a little more paprika and cayenne. You can also sprinkle on a little extra shredded cheddar cheese if the mood strikes you.

Step 5Cover with foil and bake at 350 degrees for 60 min. or until potatoes are tender. Gently stir about half way through to prevent the bottom potatoes from getting too brown.
