Ingredients
- 8 large potatoes
- 1 medium onion
- 1/2 cup butter
- 8 ounces cream cheese, low-fat
- 1/2 cup sour cream, lite
- 1 large egg, beaten
- - salt and pepper to taste
How To Make make ahead mashed potatoes

Step 1Boil potatoes with chopped onions until tender, about 10 minutes. Drain & mash while hot.

Step 2Add butter, cream cheese, sour cream to potatoes and mix.

Step 3Add a spoon of hot potato mixture to beaten egg, stir, and then add to entire potato mixture. (This tempers the egg.)

Step 4Salt and pepper to taste. Eat, or save until later. Bake at 350 degrees for 30 - 35 minutes. Keeps up to 2 or 3 days.
