These are the best potatoes we have ever had! Perfect to eat right away, or save up to 3 days then bake.

Ingredients

  • 8 large potatoes
  • 1 medium onion
  • 1/2 cup butter
  • 8 ounces cream cheese, low-fat
  • 1/2 cup sour cream, lite
  • 1 large egg, beaten
  • - salt and pepper to taste

How To Make make ahead mashed potatoes

  • Step 1
    Boil potatoes with chopped onions until tender, about 10 minutes. Drain & mash while hot.
  • Step 2
    Add butter, cream cheese, sour cream to potatoes and mix.
  • Step 3
    Add a spoon of hot potato mixture to beaten egg, stir, and then add to entire potato mixture. (This tempers the egg.)
  • Step 4
    Salt and pepper to taste. Eat, or save until later. Bake at 350 degrees for 30 - 35 minutes. Keeps up to 2 or 3 days.
