How to Make Make Ahead Mashed Potatoes
- Boil potatoes with chopped onions until tender, about 10 minutes. Drain & mash while hot.
- Add butter, cream cheese, sour cream to potatoes and mix.
- Add a spoon of hot potato mixture to beaten egg, stir, and then add to entire potato mixture. (This tempers the egg.)
- Salt and pepper to taste.
Eat, or save until later. Bake at 350 degrees for 30 - 35 minutes. Keeps up to 2 or 3 days.
