I absolutely love candied yams...but don't want the oh so sweet from all the sugars. So here is my version of deliciousness without all the sugar!

prep time 30 Min
cook time 1 Hr 30 Min
method Bake
yield 8-10 serving(s)

Ingredients

  • 8 medium yam or sweet potatoes
  • 1 - orange, use zest and juice
  • 1 1/2 tablespoons nutmeg
  • 1 1/2 tablespoons cinnamon
  • 2 tablespoons pure vanilla extract
  • 2 tablespoons brown sugar
  • 2 tablespoons salted butter

How To Make healthy candied yams

  • Step 1
Peel the potatoes, making sure you get the white off. Slice them in 1/2 inch rounds.
  • Step 2
Mix together your sugar and spices. Set aside.
  • Step 3
Place your potato slices to form a single layer, sprinkle 1/2 of your SnS mix and vanilla over top, take 1/2 of your butter in lil pats over top and zest 1/2 of your orange over that. Repeat that. Then squeeze your orange juice over the whole thing, watching for seeds.
  • Step 4
Bake covered for roughly an hour and a half, give them a stir, sit for 5 minutes and enjoy!
