I absolutely love candied yams...but don't want the oh so sweet from all the sugars. So here is my version of deliciousness without all the sugar!

Ingredients

  • 8 medium
    yam or sweet potatoes
  • 1
    orange, use zest and juice
  • 1 1/2 Tbsp
    nutmeg
  • 1 1/2 Tbsp
    cinnamon
  • 2 Tbsp
    pure vanilla extract
  • 2 Tbsp
    brown sugar
  • 2 Tbsp
    salted butter

How to Make healthy candied yams

Step-by-Step

  1. Peel the potatoes, making sure you get the white off. Slice them in 1/2 inch rounds.
  2. Mix together your sugar and spices. Set aside.
  3. Place your potato slices to form a single layer, sprinkle 1/2 of your SnS mix and vanilla over top, take 1/2 of your butter in lil pats over top and zest 1/2 of your orange over that. Repeat that. Then squeeze your orange juice over the whole thing, watching for seeds.
  4. Bake covered for roughly an hour and a half,give them a stir, sit for 5 minutes and enjoy!
