Ingredients

  • 2 pounds potatoes, all-purpose.
  • 5 ounces bacon diced
  • 8 ounces red onions diced
  • 4 ounces white wine vinegar
  • 3 tablespoons dijon mustard
  • 18 ounces chicken stock heated
  • 1/3 cup fresh chopped chives
  • - salt to taste
  • - fresh ground black pepper
  • 1/2 cup olive oil

How To Make german potato salad

  • Step 1
    cook the potatoes in simmering water until tender.drain
  • Step 2
    saute the bacon until it is nearly cooked.add the sweet red onion, then drain off exces fat.
  • Step 3
    add the vinegar, olive oil, salt & pepper, mustard, warm stock & chives to the bacon simmer pour the dressing over the warm potatoes serve the salad warm
