  • 2 lb
    potatoes, all-purpose.
  • 5 oz
    bacon diced
  • 8 oz
    red onions diced
  • 4 oz
    white wine vinegar
  • 3 Tbsp
    dijon mustard
  • 18 oz
    chicken stock heated
  • 1/3 c
    fresh chopped chives
  • ·
    salt to taste
  • ·
    fresh ground black pepper
  • 1/2 c
    olive oil

How to Make GERMAN POTATO SALAD

Step-by-Step

  1. cook the potatoes in simmering water until tender.drain
  2. saute the bacon until it is nearly cooked.add the sweet red onion, then drain off exces fat.
  3. add the vinegar, olive oil, salt & pepper, mustard, warm stock & chives to the bacon simmer pour the dressing over the warm potatoes serve the salad warm
