- 2 pounds potatoes, all-purpose.
- 5 ounces bacon diced
- 8 ounces red onions diced
- 4 ounces white wine vinegar
- 3 tablespoons dijon mustard
- 18 ounces chicken stock heated
- 1/3 cup fresh chopped chives
- - salt to taste
- - fresh ground black pepper
- 1/2 cup olive oil
How To Make german potato salad

Step 1cook the potatoes in simmering water until tender.drain

Step 2saute the bacon until it is nearly cooked.add the sweet red onion, then drain off exces fat.

Step 3add the vinegar, olive oil, salt & pepper, mustard, warm stock & chives to the bacon simmer pour the dressing over the warm potatoes serve the salad warm
