easy ham and potato hash
This is a quick meal for any time of the day. Simple and delicious. The recipe is for one serving, but you may multiply, if desired. For St. Patrick's Day, swap corned beef for the ham. So good!

Ingredients
- 1/2 tablespoon bacon grease or butter
- 1/3 cup diced onion
- 1 medium cooked potato, coarsely chopped or cubed (baked, boiled or microwaved, 1 cup)
- - fresh ground black pepper, to taste
- - salt, to taste
- 1/3 to 1/2 cup sliced, chopped, cooked smoked ham
- 1 teaspoon minced fresh chives (optional)
How To Make easy ham and potato hash

Step 1Melt grease or butter in medium skillet over medium heat.

Step 2Add onions; saute until translucent.

Step 3Add potatoes and a generous pinch of pepper and salt; cook over medium-medium-high heat until potatoes begin to brown, turning mixture over in pan occasionally to promote even browning.

Step 4Add ham; lower heat to medium; cook about 1 to 2 minutes, until ham is heated through and begins to brown slightly.

Step 5Remove from heat and serve immediately (sprinkle with chives, if desired.)

Step 6Recipe may be doubled, tripled etc...
