This is a quick meal for any time of the day. Simple and delicious. The recipe is for one serving, but you may multiply, if desired. For St. Patrick's Day, swap corned beef for the ham. So good!

Ingredients

  • 1/2 tablespoon bacon grease or butter
  • 1/3 cup diced onion
  • 1 medium cooked potato, coarsely chopped or cubed (baked, boiled or microwaved, 1 cup)
  • - fresh ground black pepper, to taste
  • - salt, to taste
  • 1/3 to 1/2 cup sliced, chopped, cooked smoked ham
  • 1 teaspoon minced fresh chives (optional)

How To Make easy ham and potato hash

  • Step 1
    Melt grease or butter in medium skillet over medium heat.
  • Step 2
    Add onions; saute until translucent.
  • Step 3
    Add potatoes and a generous pinch of pepper and salt; cook over medium-medium-high heat until potatoes begin to brown, turning mixture over in pan occasionally to promote even browning.
  • Step 4
    Add ham; lower heat to medium; cook about 1 to 2 minutes, until ham is heated through and begins to brown slightly.
  • Step 5
    Remove from heat and serve immediately (sprinkle with chives, if desired.)
  • Step 6
    Recipe may be doubled, tripled etc...
