These are a delicious side dish that stands up to any hearty main dish. It's perfect because you can never have enough wats to cook potatoes that don't need gravy. My family loves these and I bet yours will too! :) My rule is normally 1/2 a pound of potatoes per person. You might want your servings to be smaller.

Ingredients

  • 3 pounds small red potatoes, washed and cut in half
  • 1/2 cup olive oil
  • 1/4 cup fresh dill, well chopped
  • 2 cloves finely minced garlic
  • 1 teaspoon red pepper
  • cup sea salt or kosher salt to taste

How To Make dull roasted red potatoea

  • Step 1
    Place a rack in upper third of oven; preheat to 400°F.
  • Step 2
    In a large bowl, whisk together garlic,salt, pepper and dill until though only combined. Toss mixture with potatoes until potatoes are well coated.
  • Step 3
    Roast until golden brown and cooked through, 30–35 minutes.
  • Step 4
    Toss potatoes in same bowl with parsley, lemon juice, and red pepper flakes. Top with lemon zest just before serving.
