creamy, cheesy potatoes au gratin
This is a delicious lower fat recipe I make w/ low fat cream cheese and light cream. Great for sunday brunches or as a side dish.

Ingredients
- 3 tablespoons unsalted butter
- 1 - onion, finely chopped
- 1 cup 2% milk
- 1/2 cup light cream
- - salt and pepper to taste
- 8 ounces reduced-fat cream cheese, cut into cubes
- 3/4 cup grated parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 tablespoon fresh thyme
- 3 pounds red potatoes, peeled, cut into 1/2'-slices
- - chopped chives for garnish
How To Make creamy, cheesy potatoes au gratin

Step 1Heat oven to 350. Spray a 3-quart casserole dish w/ cooking spray. Melt butter in lg skillet over medium heat. Add onion, cook about 5 mins, stirring occasionally.

Step 2Add the milk, cream and 1/2 tsp pepper. Bring to a low simmer. Add cream cheese. Cook, stirring until melted. Stir in 1/2 cup parmesan cheese, parsley and thyme.

Step 3Place potatoes in casserole dish. Pour milk mix over potatoes and sprinkle w/ 1/4 cup parmesan cheese. Cover casserole dish w/ foil. Place casserole dish on a lg baking sheet. Bake until potatoes are tender, about 1 hr. Sprinkle w/ chives.
