This is nsuch and under appreciated dish. Please try it you won't be sorry. Please don't save it just for St. Patrick's Day. I don't know where or when this recipe came to my family, I just know it has always been there.

Ingredients
- 4 tablespoons bacon drippings
- 1 pound cooked mashed potatoes
- 1/2 pound cabbage shredded(traditional is green but red is good as well)
- 1/2 pound onions chopped
- 1/2 pound bacon cut into cubes
- 1 pinch parsley
- 3 tablespoons butter to mix in the colcannon
How To Make colcannon

Step 1Melt the drippings or crisco in a skillet. Add potatoes, cabbage and onions. Cook until browned.

Step 2Add bacon and continue to cook until bacon is cooked. Season with salt and pepper and serve on a large platter top with chopped parsley.

Step 3Add 3 Tbl. butter to melt in.
