Pan Fry

4 Tbsp
bacon drippings
1 lb
cooked mashed potatoes
1/2 lb
cabbage shredded(traditional is green but red is good as well)
1/2 lb
onions chopped
1/2 lb
bacon cut into cubes
1 pinch
3 Tbsp
butter to mix in the colcannon

How to Make Colcannon


  • 1Melt the drippings or crisco in a skillet. Add potatoes, cabbage and onions. Cook until browned.
  • 2Add bacon and continue to cook until bacon is cooked. Season with salt and pepper and serve on a large platter top with chopped parsley.
  • 3Add 3 Tbl. butter to melt in.
