Ingredients

  • 1 pkg
    (10 oz.) frozen chopped spinach
  • 6
    potatoes, peeled and chopped
  • 1/2 c
    chicken broth
  • 1/2 c
    (1 stick) butter
  • 1 c
    sour cream
  • 1 Tbsp
    chopped onion
  • 1 tsp
    salt
  • 1/4 tsp
    dried dill week
  • 1 c
    shredded cheddar cheese

How to Make CHEESY SPINACH & MASHED POTATOES

Step-by-Step

  1. In a large crockpot place potatoes and cover them with 1/2 cup of broth, spinach (undrained), butter, onion, dill and salt.
  2. Cook, covered, on LOW for 6-7 hours or on HIGH for 3 hours.
  3. Mash potatoes in a large bowl or right in the crockpot. Stir in sour cream. Transfer to a large casserole dish and top with cheddar cheese.
  4. Place under the broiler for about 5 minutes, or until the cheese melts. Serve with your favorite meat dish.
