apple & sweet potato stuffing

I found the original recipe for this dish in one of my cookbooks called "THE OLD FARMER'S EVERYDAY COOKBOOK". I was looking for a recipe where I could use a can of sweet potatoes from the pantry. My husband doesn't care for sweet potatoes that much, & I love them because I grew up eating them. This is the recipe I found, and believe it or not he ate 2 servings, I couldn't believe it. It is easy, quick and simple to make, I did make a few changes but nothing major. I will make it again. Hope you like it too. If you like sweet potatoes or maybe if you don't you may like this recipe.

Ingredients

  • 4 medium tart apples, cubed (i peeled mine, used red delicious)
  • 1 can 29 1/2 ounce sweet potatoes drained
  • 2 tablespoons butter
  • 1 tablespoon coconut oil (my addition)
  • 1 teaspoon nutmeg (my addition)
  • 3 tablespoons sugar (i used agave nectar instead)
  • 2 teaspoons chopped chive (my addition) as garnish
  • 2 medium onions diced (i used red onions)
  • 1/4 cup dry white wine (i didn't have any)

How To Make apple & sweet potato stuffing

  • Step 1
    Melt butter with coconut oil and add diced onions and cubed apples, cook over medium high heat until onions are transparent about 5-7 minutes. These are most of the main ingredients for the recipe. I show 2 apples but used 4.
  • Step 2
    Add the drained sweet Potatoes, nutmeg and agave nectar. Stir to blend, then moisten with wine.
  • Step 3
    Spoon to a serving bowl, top with chopped chives or a hand full of nuts if desired. I added a pat of butter while potatoes were still hot.
  • Step 4
    I served them with Lemon Pepper Panko Salmon Patties,& Peas, and it was a great quick dinner idea.
