apple & sweet potato stuffing
I found the original recipe for this dish in one of my cookbooks called "THE OLD FARMER'S EVERYDAY COOKBOOK". I was looking for a recipe where I could use a can of sweet potatoes from the pantry. My husband doesn't care for sweet potatoes that much, & I love them because I grew up eating them. This is the recipe I found, and believe it or not he ate 2 servings, I couldn't believe it. It is easy, quick and simple to make, I did make a few changes but nothing major. I will make it again. Hope you like it too. If you like sweet potatoes or maybe if you don't you may like this recipe.

Step 1Melt butter with coconut oil and add diced onions and cubed apples, cook over medium high heat until onions are transparent about 5-7 minutes. These are most of the main ingredients for the recipe. I show 2 apples but used 4.

Step 2Add the drained sweet Potatoes, nutmeg and agave nectar. Stir to blend, then moisten with wine.
-
Step 3Spoon to a serving bowl, top with chopped chives or a hand full of nuts if desired. I added a pat of butter while potatoes were still hot.
-
Step 4I served them with Lemon Pepper Panko Salmon Patties,& Peas, and it was a great quick dinner idea.
