This sweet tropical syrup is wonderful in cocktails, on pancakes or over yogurt. Recipe courtesy of Marc Matsumoto of the Fresh Tastes blog. Posted for play in Culinary Quest.

Ingredients

  • 1 cup sugar
  • 1 cup water
  • 1 1/2 cups passion fruit pulp (about 6 passion fruits)

How To Make "south american - passion fruit syrup

  • Step 1
    Add the sugar and water to a small saucepan and bring to a boil.
  • Step 2
    Boil the mixture over high heat for 5 minutes.
  • Step 3
    Add the passion fruit pulp and cook, stirring for another 1 minute.
  • Step 4
    Turn off the heat and put the pot in a cold water bath to quickly chill.
  • Step 5
    At this point you can either strain the syrup and discard the seeds, or keep both the seeds and syrup together as I like to do.
