Ingredients
- 1 tablespoon oil or bacon grease
- 4 - bacon
- 1/2 cup onion, chopped
- 2 - carrots, chopped
- 5 medium mushrooms, fresh
- 3 cloves garlic
- 1 cup quinoa
- 2 cups vegetable broth
- 3/4 cup walnut pieces
- 1/4 cup parsley, chopped
How To Make quinoa pilaf

Step 1Cook bacon until crispy. Reserve 1 tbsp of the bacon fat for frying or discard and use oil.

Step 2Cook onions for 5 minutes, add carrots, mushrooms and garlic and cook for another 3 minutes.

Step 3IMPORTANT: rinse your quinoa very good to get rid of the bitter taste on the grains. Add the quinoa and vegetable broth.

Step 4Bring to a boil. Reduce heat to simmer, cover and cook for 15-20 minutes.

Step 5In a bowl toss together the quinoa mixture, walnuts and parsley. Serve warm or at room temperature.
