1 Tbspoil or bacon grease

1/2 conion, chopped

2carrots, chopped

5 mediummushrooms, fresh

1 cquinoa

2 cvegetable broth

3/4 cwalnut pieces

1/4 cparsley, chopped
How to Make Quinoa Pilaf
- Cook bacon until crispy. Reserve 1 tbsp of the bacon fat for frying or discard and use oil.
- Cook onions for 5 minutes, add carrots, mushrooms and garlic and cook for another 3 minutes.
- IMPORTANT: rinse your quinoa very good to get rid of the bitter taste on the grains.
Add the quinoa and vegetable broth. - Bring to a boil. Reduce heat to simmer, cover and cook for 15-20 minutes.
- In a bowl toss together the quinoa mixture, walnuts and parsley. Serve warm or at room temperature.
