1Cook bacon until crispy. Reserve 1 tbsp of the bacon fat for frying or discard and use oil.
2Cook onions for 5 minutes, add carrots, mushrooms and garlic and cook for another 3 minutes.
3IMPORTANT: rinse your quinoa very good to get rid of the bitter taste on the grains.
Add the quinoa and vegetable broth.
4Bring to a boil. Reduce heat to simmer, cover and cook for 15-20 minutes.
5In a bowl toss together the quinoa mixture, walnuts and parsley. Serve warm or at room temperature.
