fresh cranberry salad

My mom has served this at every Thanksgiving and Christmas. In our house it doesn't feel like the holidays without it! A great way to enjoy cranberries.

Ingredients

  • 1 bag cranberries (12oz)
  • 1 1/2 cups sugar
  • 1 cup pecans
  • 1 can crushed pineapple, with juice (8 oz)
  • 2 cups mini marshmellows
  • 1 pint heavy whipping cream

How To Make fresh cranberry salad

  • Step 1
    Rinse cranberries. Remove squishy ones and stems.
  • Step 2
    Place cranberries, sugar, and pecans in food processor and grind up, remove and put in separate bowl. Let rest for 15 minutes. The sugar will pull juice from cranberries.
  • Step 3
    Mix in the can of crushed pineapple (with juice) and mini marshmallows to bowl with cranberry mixture.
  • Step 4
    In food processor or mixer add heavy whipping cream, whip it until it forms stiff peaks, add to cranberry mixture, let sit in fridge at least hour.
  • Step 5
    Serve and enjoy!
