I hope you enjoy the summer as much as I do. I love the fresh veggies. My mom used to make this a lot in the summer. We always had a large garden. Its been in my family for years. hope you enjoy.

Ingredients

3 medium
yellow squash
1 medium
onion, chopped
1/2 c
fine bread crumbs
1/3 c
cheddar cheese, shredded
1/2 tsp
salt
4 Tbsp
butter, divided
1
egg beaten or egg substitute

How to Make Yellow Squash Casserole

Step-by-Step

  • 1Cook squash and onion in small amount of salted water until tender, Drain. Add bread crumbs [save one spoonful for top} Add cheese, egg,salt, and 2T. butter. Spoon into greased casserole. Top with remaining bread crumbs and dot with 2T of butter. Bake in 350 degrees for 25 minutes
