After all these years, have finally found a good dressing recipe (for OUTSIDE the turkey) that will make my vegetarian daughter and friends very happy.

Ingredients

2 slice
multigrain bread
2 - 3 Tbsp
olive oil
1
onion, chopped
1
shallot, chopped
1
celery stalk, chopped
fresh kale, torn in small-ish pieces
mushrooms, sliced
1 clove
garlic, chopped fine
1
apple, chopped
1 c
walnuts, chopped
few sprig(s)
parsley
1/2 tsp
each: thyme, sage
veggie broth (if needed to moisten)

How to Make Vegetarian Dressing

Step-by-Step

  • 1Cut bread into cubes, bake at 400 till slightly toasted (5-6 minutes). Assemble all ingredients!!
  • 2Heat oil in skillet. Add onions, shallot, celery, garlic, mushrooms and kale, mix and saute for about 5 minutes till veggies are soft. Stir in bread cubes, mix well. Put everything into casserole dish. Add apple, nuts, parsley and spices. (If mixture is too dry, add small amount of vegetable broth.)
  • 3Cover with foil. Bake at 400 for 25 minutes. Remove foil and bake another 10 minutes, till crispy on top.
