Found this in the Cowboy Cookbook. I did change things up a little..

Ingredients

  • 1/2 pound bacon, cooked,and crumbled
  • 2 16oz cans cream-style corn
  • 2 - large eggs
  • 3/4 cup yellow cornmeal
  • 1 teaspoon garlic salt
  • 3 tablespoons vegetable oil
  • 3 tablespoons bacon drippings
  • 1 4oz cans green chilies,chopped finely.
  • 2 cups cheddar cheese, shredded

How To Make tucson corn bake..

  • Step 1
    Pre-heat oven to 350... In a skillet cook bacon till chrisp. Crumble bacon and set a side. Reserve 3 tablespoons of drippings.
  • Step 2
    Mix all ingrediente except chilies cheese and bacon. Place 1/2 of the mix in a 8 inch sguare baking dish. mix chilies,cheese,and bacon together and spread over corn mixture... Cover with remanining corn mix. Bake uncovered for 35 minutes....Serve warm...
