I found this recipe on the internet. I love onions, especially sweet vidalias.

This is a side dish made in "onion heaven".

cooking spray
1 Tbsp
olive oil
4 c
chopped vidalia onions, or other sweet onion
1/2 c
brown rice, cooked
1/3 c
milk, 2%
1/2 c
smoked swiss cheese, shredded, or any smoked cheese you like
1/4 tsp
1/4 tsp
1/8 tsp
allspice, ground
1/3 c
parmesan cheese
2 Tbsp
fresh parsley

How to Make Sweet Onion Casserole


  • 1Heat oven to 325 degrees. Spray an 8-inch square baking dish with cooking spray.
  • 2In a large skillet, heat olive oil. Saute onions 5 minutes, or until tender. Transfer onions to a bowl.
  • 3Stir brown rice, and next 5 ingredients into onions. Then spoon onion mixture into baking dish. Sprinkle parmesan cheese on top of onions.
  • 4Cover baking dish with foil and bake for 30 minutes. Uncover baking dish, and cook 5 minutes more. Sprinkle with parsley, and serve. Enjoy!!
