Ingredients
- - cooking spray
- 1 tablespoon olive oil
- 4 cups chopped vidalia onions, or other sweet onion
- 1/2 cup brown rice, cooked
- 1/3 cup milk, 2%
- 1/2 cup smoked swiss cheese, shredded, or any smoked cheese you like
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/8 teaspoon allspice, ground
- 1/3 cup parmesan cheese
- 2 tablespoons fresh parsley
How To Make sweet onion casserole

Step 1Heat oven to 325 degrees. Spray an 8-inch square baking dish with cooking spray.

Step 2In a large skillet, heat olive oil. Saute onions 5 minutes, or until tender. Transfer onions to a bowl.

Step 3Stir brown rice, and next 5 ingredients into onions. Then spoon onion mixture into baking dish. Sprinkle parmesan cheese on top of onions.

Step 4Cover baking dish with foil and bake for 30 minutes. Uncover baking dish, and cook 5 minutes more. Sprinkle with parsley, and serve. Enjoy!!
