I found this recipe on the internet. I love onions, especially sweet vidalias.

This is a side dish made in "onion heaven".

    cooking spray
  • 1 Tbsp
    olive oil
  • 4 c
    chopped vidalia onions, or other sweet onion
  • 1/2 c
    brown rice, cooked
  • 1/3 c
    milk, 2%
  • 1/2 c
    smoked swiss cheese, shredded, or any smoked cheese you like
  • 1/4 tsp
  • 1/4 tsp
  • 1/8 tsp
    allspice, ground
  • 1/3 c
    parmesan cheese
  • 2 Tbsp
    fresh parsley

How to Make Sweet Onion Casserole


  1. Heat oven to 325 degrees. Spray an 8-inch square baking dish with cooking spray.
  2. In a large skillet, heat olive oil. Saute onions 5 minutes, or until tender. Transfer onions to a bowl.
  3. Stir brown rice, and next 5 ingredients into onions. Then spoon onion mixture into baking dish. Sprinkle parmesan cheese on top of onions.
  4. Cover baking dish with foil and bake for 30 minutes. Uncover baking dish, and cook 5 minutes more. Sprinkle with parsley, and serve. Enjoy!!
