squash casserole with french onion topping
I grew up loving squash and when I married I found out not "everyone" is wild about squash! Soo, I found this recipe that not only my hubby likes, but so does our son. Now THAT's a Homerun at our house!

Ingredients
- 3 pounds - yellow squash
- 1/2 cup cup chopped sweet onion
- 1 1/2 teaspoons salt
- 1 can reduced fat-cream of chicken soup
- 1- 8 oz packages light sour cream
- 2 tablespoons real butter
- 1/4 teaspoon freshly ground pepper
- 1 cup grated carrots (optional)
- 1 cup french fried onions
How To Make squash casserole with french onion topping

Step 1Preheat oven to 350. Cut squash into 1/4 in thick slices;place in a Dutch oven. Add onion, 1 tsp. salt, and water to cover. Bring to boil over medium-high heat, and cook 5 mins. drain well, and pat squash dry w/ paper towels.

Step 2Stir together grated carrots, other ingredientsexcept french fried onions in a large bowl'fold in squash mixture. Spoon into a lightly greased 2 qt. oval baking dish. Sprinkle French Fried Onions on top.

Step 3Bake @ 350 for 30-35 minutes or until bubbly and golden brown, shielding with aluminum foil after 20 minutes to prevent excessive browning.
