I love quinoa and serve it whenever I can. This easy casserole was wonderful. The leftovers were served tonight with a pound of hamburger cooked and added to the casserole. It became another wonderful meal.

Ingredients
- 1 cup quinoa, uncooked
- 2 cups water (times 2)
- 1/2 medium onion chopped
- 1/2 can mexican style corn
- 1 small head broccoli fresh
- 1 teaspoon garlic minced
How To Make quinoa casserole

Step 1In a sauce pan heat to boiling 2 cups water, 1 teaspoon oil and the crown of the broccoli cut into florets. Turn off, cover and set aside. wait 10 minutes and drain. Cut into small florets and set aside in a medium bowl. This keeps them bright green.

Step 2Drain the corn and put half into the bowl as well. Save the rest for another day.

Step 3In a saucepan put 2 cups water, the onion, garlic and the quinoa. Bring to a boil and simmer until the water is gone. add to bowl. Mic if needed to serve hot.
