- Slice the squashes thin, ( I used a mandolin) add to saute pan with the diced onions. saute about 5 mins.
- add in the rest of ingredients, (save 1/2 cup of cheese for topping) combine well.
- transfer to a baking dish, sprinkle top with more shredded cheese, bake at 350 for 30 mins or until golden brown, let cool before serving.
