  • 3
    squash, fresh
  • 1 small
    onion, diced
  • 1/2 stick
    butter,room temperature
  • 1 c
  • 1 1/2 c
    cheddar cheese, shredded
  • ·
    salt and pepper

How to Make Keto Squash Casserole


  1. Slice the squashes thin, ( I used a mandolin) add to saute pan with the diced onions. saute about 5 mins.
  2. add in the rest of ingredients, (save 1/2 cup of cheese for topping) combine well.
  3. transfer to a baking dish, sprinkle top with more shredded cheese, bake at 350 for 30 mins or until golden brown, let cool before serving.
