easy broccoli stuff casserole

This recipe came about as I was trying to eliminate the left overs from the fridge after a week of cooking. I decided to make a casserole with my findings, and then grill some steaks to go with it. This is the stuff I found, hence the name of the dish. Needless to say, this was a great idea, and I didn't need to throw out anything. A repurposed meal almost by accident, simply by adding the soup and a couple of spices I had a perfect side dish. Baked it in the oven for 45 minutes and dinner was ready.

Ingredients

  • 2 cups broccoli floweretts steamed
  • 3 cups cauliflower, steamed
  • 1 cup shredded cheddar cheese
  • 1 pound velveeta cheese, cubed
  • 1 can cream of chicken or mushroom soup, undiluted
  • - cooking spray
  • 2-3 cups cooked rice (i had cooked minute maid)
  • 1 teaspoon steak seasoning
  • 1 teaspoon granulated garlic
  • - smoked paprika to garnish the top

How To Make easy broccoli stuff casserole

  • Step 1
    PREHEAT OVEN TO 350 DEGREES F. Add the broccoli and cauliflower to a large bowl, then add in the rice and stir to mix together.
  • Step 2
    Add in the spices and shredded cheese, stir until mixed together.
  • Step 3
    Add in the can of soup, blend together.
  • Step 4
    Cube the velveeta cheese and add in and stir to mix..
  • Step 5
    Now spray a 4 quart casserole dish with non stick cooking spray. Then Pour in the broccoli mixture. Smooth out top with back of a spoon.
  • Step 6
    Sprinkle top of casserole with smoked paprika. Bake in preheated 350 degree F. oven for 35-45 minutes or until heated through and casserole is hot and bubbly along the edges.
  • Step 7
    Scoop up a serving of this cheesy casserole and enjoy.
