dinner guest macaroni & cheese
I created this recipe for a special occasion, when you want to impress your guest. It is creamy smooth, tasty, & has so much flavor. Nothing is spared or short changed when you make this recipe. You can add the bacon bits just on top or put extra in the casserole & then add more on top. The flavor from the smoked bacon not only adds crunch & texture but flavor as well. I really impressed myself. My husband really loved it, & I am sure you will too. It is loaded with calories, so you can only indulge once in awhile, but its worth every bite. Impress your guest, they'll want the recipe.

Ingredients
- 1 pound macaroni (cooked al dente about 7-8 minutes)
- 8 ounces cream cheese, cubed
- 8 ounces jalapeno cheese, shredded
- 1 pound sharp cheddar cheese, shredded
- 8 ounces mozzarella cheese, shredded
- 1 pound velveeta cheese, cubed
- 1 cup heavy whipping cream
- 1 cup milk
- 1 stick butter
- 2 large eggs, room temperature
- 2 teaspoons each coarse black pepper, & salt if desired
- 2 tablespoons chopped chive
- 1 cup real bacon bits, divided -optional
- 1 teaspoon kosher salt

Step 1Preheat oven to 350 degrees F. Instead of a 9X13 size dish, I used one smaller dish, and added the remainder to an oval casserole dish. I added the bacon to the smaller dish just to test it to see how it was. It sure does add a lot of punch in flavor. Next time I will add it to the larger dish. Some of the ingredients used in this dish.

Step 2Cook the macaroni in large pot of water with 1 teaspoon or more of salt, till Al Dente, about 8 minutes then drain, and add to a large bowl or pot. I used the same pot I cooked the macaroni in.

Step 3Add butter to macaroni while the macaroni is still hot.

Step 4Cube the Cream Cheese and add to the macaroni, and stir to blend together.

Step 5Cube the Velveeta and then add it in as well, and stir to mix into pasta.

Step 6Shred the hot Pepper Jack and Sharp Cheddar Cheese, and add all but about 1 cup of sharp cheddar, which you will save for the top.

Step 7Add chive and black pepper, & Optional Bacon bits if using, reserving about 1/3 of cup for top if desired. stir till mixed in.

Step 8Combine eggs with milk and whipping cream, and whisk till blended, then pour over macaroni. Spray a 9 X13 X2 inch size casserole dish with non stick cooking spray.

Step 9Pour Macaroni & Cheese into casserole dish. Place in preheated 350 degrees F. oven and bake for about 45 minutes or until casserole is hot and bubbly. Then remove from oven and add the RESERVED CUP OF SHREDDED CHEDDAR CHEESE ON TOP, AND RETURN TO OVEN and bake for an additional 10 minutes or until cheese melts.

Step 10Remove from oven allow to sit at least 10 minutes then serve as desired.
