I got this from Debbie Hillin many years ago! It is easy and so yummy. ENJOY!! :)

Ingredients

  • 1 package cream cheese
  • 2 cans white shoepeg corn
  • 1 can green chiles diced
  • 1 can evaporated milk
  • 1 package shredded colby & monteray jack cheese
  • 1 pinch salt
  • 1 pinch pepper

How To Make corn casserole

  • Step 1
    Preheat oven to 350. In med saucepan over med/hi heat bring the evaporated milk, cream cheese and green chiles together and blend well. Add corn and stir until most of cream cheese is softened.
  • Step 2
    Pour into glass casserole dish and cover with shredded cheese.
  • Step 3
    Cook about 20 minutes or until cheese is melted and a little bubbly. Serve with BBQ and summer salad!
