Ingredients

  • 1 bunch cauliflower, small florets
  • 1/2 stick butter
  • 2 ounces olive oil
  • 1 medium shallot
  • 1 tablespoon flour
  • 2 cups cheddar cheese

How To Make cauliflower mac & cheese

  • Step 1
    Par boil cauliflower pieces in boiling water for about 5 minutes - remove and drain
  • Step 2
    In separate sauce pan , melt butter and add olive oil. Stir in flour a little at a time so as not to make it clump. Add 1- 1/2 cups cheese a little at a time, mixing so that the sauce becomes smooth - add a little milk/half&half/almond milk - salt & pepper to taste
  • Step 3
    Put cauliflower in baking pan - use spam or butter on the bottom and edges. Pour sauce over cauliflower. Sprinkle remaining cheese Bake 375 degrees - about 15 minutes - until bubbly
