Ingredients
- Med to Lg - head of cauliflower - washed and broke into small pieces
- 4 ounces softened cream cheese
- 1/4 cup sour cream
- 3/4 cup crisp, cooked ,chopped bacon
- 2-3 - green onions sliced, ends as well - can use small diced onion as well
- 1 3/4 cups fresh shredded cheddar cheese, reserving 3/4 cup for the top of casserole.
- 1 teaspoon each- garlic powder, seas salt and pepper
How To Make ~ cauliflower casserole ~ my way

Step 1Place cauliflower in dutch oven, cover with water and add some salt. Bring to boil and reduce to simmer. Continue cooking until fork tender. Drain well.

Step 2Once tender, add to a large bowl and using a potato masher, mash until desired consistency We like ours lumpy. While hot, stir remaining ingredients into hot cauliflower, reserving 3/4 cup cheddar for top of casserole. Stir until cheese is melted and all ingredients are well blended.

Step 3Preheat oven to 350. Spray a 9x13 baking dish with non stick cooking spray. Spread cauliflower evenly into dish. Top with remaining cheese. Bake for 20 - 25 minutes or until bubbly and cheese begins to brown. Can sprinkle with chives when serving if desired. Serve hot!
