Another delicious family tested low carb recipe! So so good! My kids just love it!

Ingredients

  • Med to Lg - head of cauliflower - washed and broke into small pieces
  • 4 ounces softened cream cheese
  • 1/4 cup sour cream
  • 3/4 cup crisp, cooked ,chopped bacon
  • 2-3 - green onions sliced, ends as well - can use small diced onion as well
  • 1 3/4 cups fresh shredded cheddar cheese, reserving 3/4 cup for the top of casserole.
  • 1 teaspoon each- garlic powder, seas salt and pepper

How To Make ~ cauliflower casserole ~ my way

  • Step 1
    Place cauliflower in dutch oven, cover with water and add some salt. Bring to boil and reduce to simmer. Continue cooking until fork tender. Drain well.
  • Step 2
    Once tender, add to a large bowl and using a potato masher, mash until desired consistency We like ours lumpy. While hot, stir remaining ingredients into hot cauliflower, reserving 3/4 cup cheddar for top of casserole. Stir until cheese is melted and all ingredients are well blended.
  • Step 3
    Preheat oven to 350. Spray a 9x13 baking dish with non stick cooking spray. Spread cauliflower evenly into dish. Top with remaining cheese. Bake for 20 - 25 minutes or until bubbly and cheese begins to brown. Can sprinkle with chives when serving if desired. Serve hot!
