Since I am not a carrot lover my Mom use to make this because she could not get me to eat them any other way. So eat your veggies.Enjoy!!!!!!!!!!!!!!!!!!!!!!!!

Ingredients

  • 4 cups carrot, sliced
  • 1 medium onion
  • 1/4 cup margarine
  • 2 cups cheddar cheese,cubed or shredded
  • 2 cups ritz cracker, crushed
  • 2 tablespoons mayonnaise dressing
  • 1 pinch salt and pepper

How To Make carrot casserole

  • Step 1
    Cook carrots in small amount of water until they are tender. Drain and place carrots in greased casserole. Add chopped onions, and dot with margarine. Stir in cheese and mayonnaise. Top with crushed crackers. Bake at 350 degrees for 30 minutes.
