Great with soy hot dogs, veggie burgers - family loves it, even if they aren't vegetarians! If you are a family of meat-eaters and they are hesitant to eat Boca... add a splash of Worcestershire sauce to the soymeat/onion as they heat together. Your meat-eaters will never know the difference! (This is a recipe from Pampered Chef that I modified for my vegetarian in-laws.)

Ingredients

  • SAUTE'
  • 1 tablespoon oil (olive, sunflower, or canola)
  • 1 medium onions, yellow, medium
  • 1 pound boca soy burger crumbles
  • ADD
  • 2 (15oz) cans vegetarian baked beans
  • 1 (28oz) can cut green beans, drained & rinsed
  • 1 (15oz) can great northern beans, drained & rinsed
  • 1 (15oz) can red kidney beans, drained & rinsed
  • 1 (15oz) can black beans, drained & rinsed
  • 1 can whole kernel corn, drained
  • GENTLY STIR IN
  • 1 (28oz) bottle sweet baby ray's honey dijon bbq sauce

How To Make calico beans - vegetarian

  • Step 1
    Preheat oven to 350.
  • Step 2
    In stovetop wok or large skillet, saute' onion in oil until almost clear. Add soy burger crumbles and reduce heat to medium. Stir occasionally, for about ten minutes.
  • Step 3
    Meanwhile, drain & rinse all of the beans and corn, except the baked beans. Go ahead and mix beans and corn together, except for the baked beans.
  • Step 4
    Remove the wok/skillet from heat, gently stir in both cans of baked beans. Add the bean and corn mixture. Pour entire bottle of BBQ sauce, gently stirring.
  • Step 5
    Once well combined, pour into oven safe casserole dish. Bake at 350 for 40 minutes. Serve hot at once or warm later!
