Everything is better with bacon! This is a favorite casserole for Thanksgiving or Christmas.

Ingredients

  • 24 ounces small curd cottage cheese
  • 3 - eggs
  • 1/4 cup all purpose flour
  • 1/4 cup butter, melted
  • 20 ounces frozen chopped broccoli, thawed and drained (or use fresh!)
  • 2 cups shredded swiss cheese
  • 1 can whole kernel corn, drained (8 3/4 ounce can)
  • 1/4 cup finely chopped onion
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 dashes hot sauce
  • 2 tablespoons butter
  • 1/3 cup soft breadcrumbs
  • 8 slices bacon, cooked and crumbled

How To Make broccoli swiss cheese casserole

  • Step 1
    Combine the first 4 ingredients in the container of a blender or food processor. Process on high for 1 minute or until smooth, stopping once to scrape down the sides. Set aside.
  • Step 2
    Combine the broccoli and the next 6 ingredients in a large bowl. Add the reserved cottage cheese mixture; stir well. Pour into a lightly greased shallow 2 quart casserole dish.
  • Step 3
    Melt 2 tablespoons butter in a small saucepan over low heat; add the breadcrumbs and cook until golden, stirring occasionally. Remove from the heat; stir in the bacon.
  • Step 4
    Sprinkle the breadcrumb mixture over the casserole. Bake uncovered at 350 degrees for 45 minutes or until thoroughly heated.
