becky's sweet potato casserole
My niece got this recipe, many years ago, from her mother-in-law who grew up in Louisiana. It is a delicious side that we now serve on all holidays. It is almost like a sweet potato pie and goes perfectly with your holiday ham or turkey.

Ingredients
- 4 large sweet potatoes, baked, peeled and mashed
- 1 3/4 cups granulated sugar
- 4 large eggs
- 1 1/4 sticks butter, melter
- 2 teaspoons vanilla extract
- TOPPING
- 1/3 cup flour
- 1 cup light brown sugar
- 1 stick butter, melted
- 2 cups chopped pecans, toasted
- 1/4 teaspoon ground cinnamon (for garnish)
How To Make becky's sweet potato casserole

Step 1Heat oven to 350 degrees F. Grease a 13X9 inch baking sheet with cooking spray. Set aside.

Step 2In a large bowl, combine the sweet potatoes, sugar, eggs and butter. Transfer to prepared baking dish.

Step 3In a medium size bowl, combine the flour, brown sugar, butter and pecans. Mix well. Mixture will be slightly moist and crumbly.

Step 4Crumble topping mixture evenly over sweet potatoes in baking dish. Sprinkle evenly with cinnamon, if desired.

Step 5Bake for 40 - 50 minutes or until hot and bubbly.
