beans & corn - my grandson's recipe
In 2006, when he was ten years old, my grandson gave me this recipe. I've saved it on a scrap of paper, and it was taped inside a favorite cookbook. I've been hunting for this recipe, and I found it so that I could include it here. He loves good food and enjoyed helping in the kitchen whenever he came to my house. Now he's almost fifteen and busy with school and football!

Ingredients
- 1 can chicken broth, low salt and fat free preferred
- 2 cans favorite beans, navy or pinto for us;
- 2 small onions, chopped;
- 6 - ears corn, kernels from fresh corn;
- 1 slice salt pork, for cooking onions and garlic;
- 3 - cloves of garlic chopped;

Step 1Saute onions,garlic and salt pork;combine with remaining ingredients, cook slowly for a few minutes to cook the corn. Serve with your meat of choice, and any leftovers may be reheated.

Step 2This is such a comfort food, especially in the Fall or Winter; but with fresh corn during the Summer months it is great too with burgers, ham, pork or chicken!

Step 3If fresh corn is not available use a small bag of frozen corn kernels! *Note "my grandson is part Native American Indian, and this recipe was favored by his mother's family also.

Step 4Note** My grandson says "no adding green pepper" when I suggested it! Note***It is a wonderful change from plain beans; adjust the seasonings of course to suit yourself.
