Ingredients

  • 2 1/2 cups water
  • 1 cup uncooked wild rice
  • 1/2 cup beef consomme, undiluted
  • 1 tablespoon butter
  • 2 cups mushrooms, sliced
  • 3/4 cup celery, chopped
  • 3/4 cup onion, chopped
  • 1/4 cup dry sherry or dry white wine
  • 1/4 teaspoon black pepper

How To Make wild rice with mushrooms

  • Step 1
    Combine first 3 ingredients in a large saucepan and bring to a boil. Cover, reduce heat, and simmer for 1 hour and 10 minutes or until rice is tender and liquid is absorbed.
  • Step 2
    Melt butter in a nonstick skillet over medium heat. Add mushrooms, celery and onion; saute' 10 minutes or until tender, stirring frequently.
  • Step 3
    Add mushroom mixture, sherry or wine, and pepper to rice mixture; and stir well. Cook over medium heat, uncovered, 5 minutes or until liquid is absorbed, stirring frequently.
