Ingredients

  • 2 1/2 c
    water
  • 1 c
    uncooked wild rice
  • 1/2 c
    beef consomme, undiluted
  • 1 Tbsp
    butter
  • 2 c
    mushrooms, sliced
  • 3/4 c
    celery, chopped
  • 3/4 c
    onion, chopped
  • 1/4 c
    dry sherry or dry white wine
  • 1/4 tsp
    black pepper

How to Make Wild Rice with Mushrooms

Step-by-Step

  1. Combine first 3 ingredients in a large saucepan and bring to a boil. Cover, reduce heat, and simmer for 1 hour and 10 minutes or until rice is tender and liquid is absorbed.
  2. Melt butter in a nonstick skillet over medium heat. Add mushrooms, celery and onion; saute' 10 minutes or until tender, stirring frequently.
  3. Add mushroom mixture, sherry or wine, and pepper to rice mixture; and stir well. Cook over medium heat, uncovered, 5 minutes or until liquid is absorbed, stirring frequently.
