Ingredients
- 2 tablespoons butter
- 1/2 cup uncooked barley
- 1/2 cup chopped onion
- 1 clove garlic, minced
- 1 can (14.5 oz.) ready-to-serve chicken broth
- 1 cup water
- 1/2 cup uncooked wild rice, rinsed, drained
- 1/2 teaspoon grated lemon peel
- 1/4 cup almonds, slivered
- 2 tablespoons cranraisins
- 1/8 teaspoon pepper
How To Make wild rice and barley pilaf

Step 1In a medium saucepan, melt butter over medium heat. Add barley; cook 6 to 8 minutes or until lightly browned, stirring occasionally.

Step 2Add onion and garlic; cook and stir 2 to 3 minutes or until crisp-tender. Add broth and water. Bring to a boil. Stir in rice, lemon peel, almonds, cran-raisins, and pepper; return to a boil. Reduce heat; cover and simmer 50 to 60 minutes or until barley and rice are tender.
