    1 1/4 basmati rice,
  • ·
    2 tsp oil, vegetable
  • ·
    1/3 tsp cumin seed
  • ·
    1/4 tsp tumeric, ground
  • ·
    1 bay leaf
  • ·
    4 cloves, whole
  • ·
    2 black cardamom pods
  • ·
    1/4 tsp cinnamon
  • ·
    1/4 tsp ginger, finely minced
  • ·
    1 1/2 tsp garlic, finely minced
  • ·
    2 small green chilies, finely chopped
  • ·
    1 large onion, coarsley chopped
  • ·
    1 medium tomato, coarsley chopped
  • ·
    1/2 cup fresh green peas
  • ·
    1/2 tsp salt
  • ·
    1 tbsp fresh lemon juice

How to Make Vegetable Pulao


  1. Rinse rice really well and let soak in lots of water for 45 minutes to 1 hour. Drain really well and set aside until needed.
  2. In a large pot, add the oil and heat. When ready you will want to add the cumin seeds first.

    When the color of the seeds start to change then add the turmeric, bay leaf, cloves, cardamom, and cinnamon; cook over medium heat for 1 minute to release all the lovely flavors.
  3. Now add the ginger, garlic and chilies and cook on medium heat for one minute.

    Next add the onion, tomato and green peas and cook for 3 minutes.
  4. Now you are ready to add the rice, stir gently for about a minute to combine everything really well.

    To the rice slowly add the water and salt; cook over high heat, you will need to stir constantly until almost all the liquid has evaporated.
  5. Once all the liquid has been absorbed add the lemon juice, cover th pan, lower the heat, and cook for 7 minutes.
