  • 2 1/2 c
medium grain rice, cooked and cooled
  • 1/2 c
    parmesan, freshly ground
  • 2
small eggs, plus one egg yolk
  • 1 1/2 Tbsp
    chimichurri sauce (or to taste)
  • 1 Tbsp
    olive oil
  • 1/4 small
    sweet onion, diced
  • 1
    clove minced garlic
  • 1/4 - 1/2 tsp
sea salt and fresh ground pepper
  • 2 c
  • 6
    cubes mozzarella cheese
  • 2 c
vegetable or olive oil for frying

How to Make Tasty Rice Balls

  1. Place the cooked rice in a bowl and add 1 egg yolk , the parmesan cheese, chimichurri sauce, onion, garlic and salt, mixing well.
  2. Into another bowl add 2 eggs and beat gently. Now you will want a small bowl for the breadcrumbs and salt and pepper, mix well and set aside until needed.
  3. Heat 2 cups of oil, on stove. (making sure it will cover your rice balls)
  4. Roll your rice mixture into 6 balls, and in each ball, make a space big enough to place the mozzarella piece, then close the rice mixture around it and gently re-roll into a ball.
  5. Now you want to dip the balls into the egg wash and coat in the breadcrumbs.
  6. Fry the rice balls in the hot oil for 5-7 minutes until the outside is a nice golden color.
  7. Then remove from oil and place on paper towels to drain, repeat until all the balls are cooked.
  8. Enjoy as is or serve with tomato sauce...
