tasty rice balls
Yummm rice, cheese, onions and chimichurri sauce rolled in a ball... and deep fried, does it get any better than this?

Ingredients
- 2 1/2 cups medium grain rice, cooked and cooled
- 1/2 cup parmesan, freshly ground
- 2 - small eggs, plus one egg yolk
- 1 1/2 tablespoons chimichurri sauce (or to taste)
- 1 tablespoon olive oil
- 1/4 small sweet onion, diced
- 1 - clove minced garlic
- 1/4 - 1/2 teaspoon sea salt and fresh ground pepper
- 2 cups breadcrumbs
- 6 - cubes mozzarella cheese
- 2 cups vegetable or olive oil for frying
How To Make tasty rice balls

Step 1Place the cooked rice in a bowl and add 1 egg yolk , the parmesan cheese, chimichurri sauce, onion, garlic and salt, mixing well.

Step 2Into another bowl add 2 eggs and beat gently. Now you will want a small bowl for the breadcrumbs and salt and pepper, mix well and set aside until needed.

Step 3Heat 2 cups of oil, on stove. (making sure it will cover your rice balls)

Step 4Roll your rice mixture into 6 balls, and in each ball, make a space big enough to place the mozzarella piece, then close the rice mixture around it and gently re-roll into a ball.

Step 5Now you want to dip the balls into the egg wash and coat in the breadcrumbs.

Step 6Fry the rice balls in the hot oil for 5-7 minutes until the outside is a nice golden color.

Step 7Then remove from oil and place on paper towels to drain, repeat until all the balls are cooked.

Step 8Enjoy as is or serve with tomato sauce...
