This is super easy, super tasty. If you have homemade sofrito, ll the better, but you can certainly use store bought and it'll be fine. I use this as a side dish and as a main course.

Ingredients

  • 2 - 16 oz cans goya red or kidney beans
  • 1 large waxy potato, cut to 1/2 inch dice
  • 1 - packet goya sazon con culantro y annato seasoning
  • 1 - 16 oz can tomato sauce
  • 1 1/2 tablespoons homemade sofrito, or packaged - i use goya
  • - olive oil
  • - salt to taste
  • - cooked rice, any kind

How To Make super easy puerto rican rice and beans

  • Step 1
    In a pot, sauté the sofrito in a little olive oil for a couple of minutes.
  • Step 2
    Add all the remaining ingredients except the rice and cook covered until the diced large waxy potato is tender.
  • Step 3
    Serve over rice.
