spinach & feta brown rice

This is really good on it's own, but works well as a side with fish.

Ingredients

  • 1 tablespoon olive oil
  • 3 tablespoons feta cheese, crumbled
  • 1 teaspoon garlic, minced
  • 1/4 cup onion, choppped ( more or less, to your taste)
  • 1/2 cup fresh mushrooms, chopped
  • 1 cup fresh spinach
  • 1 cup brown rice, cooked
  • - lemon pepper seasoning (optional, to taste)

How To Make spinach & feta brown rice

  • Step 1
    In a large skillet, sautee mushroom, onion and garlic in olive oil until mushrooms are well cooked.
  • Step 2
    In skillet mix cooked brown rice and mushrooms.
  • Step 3
    Stir in chopped spinach and let sit on low to medium heat until spinach is wilted.
  • Step 4
    Add feta and lemon pepper( if desired) and serve.
