spicey cheese baked beans w/rice

Try this for your next cookout, or as main dish! Very hearty and feeds a crowd. Growing up in large family, we had to find ways to stretch our dinners. This is simply a baked bean dish with some added rice. Baked with cheese. Delish!!

Ingredients

  • 1/2 - onion chopped
  • 2 - grated garlic cloves
  • 1 small pepper chopped (any color) used yellow for contrast
  • 1/4 cup can green chillis or jalepenos chopped
  • 1 can cannelini beans (drained and rinsed)
  • 1 can black beans (drained and rinsed)
  • 1 can pinto beans (drained and rinsed)
  • 1 can baked beans or chili beans
  • 1 cup cooked rice
  • 1 cup cottage cheese, small curd
  • 1/4-1/2 cup pepper jack cheese (shredded) cheddar less intense heat

How To Make spicey cheese baked beans w/rice

  • Step 1
    Saute in olive oil onions and peppers til soften a few mins. Grate garlic gloves into pan and cook another min. Add green chilis to pan stir for another min.
  • Step 2
    In large baking pan add all beans, pour peppers and onions over beans and stir. Next stir in cooked rice then cottage cheese. S&P and chilli powder.
  • Step 3
    Topped with grated cheese and bake. Bake at 350 for 25-30 min till heated through and cheese is melted.
