Ingredients

  • 1 c
    whole grain brown rice
  • 1 1/2 c
    water
  • 1/2 c
    rotel with juice
  • 4 oz
    can of diced green chilies
  • 1
    chicken or beef low sodium bouillion cube, desolved in water
  • 2 Tbsp
    olive oil
  • 1 tsp
    ea. of granulated garlic & cumin, & black pepper
  • 1/4 tsp
    salt
  • 1 Tbsp
    paprika

How to Make Spanish Rice

Step-by-Step

  1. In a pot or skillet, heat olive oil, add rice & spices. Simmer for 5 minutes. Add liquid and green chilies, bring up to a boil, reduce heat to simmer, cover & cook approx. 45 min. - 55 min. till tender.
