Ingredients

  • 1 cup whole grain brown rice
  • 1 1/2 cups water
  • 1/2 cup rotel with juice
  • 4 ounces can of diced green chilies
  • 1 - chicken or beef low sodium bouillion cube, desolved in water
  • 2 tablespoons olive oil
  • 1 teaspoon ea. of granulated garlic & cumin, & black pepper
  • 1/4 teaspoon salt
  • 1 tablespoon paprika

How To Make spanish rice

  • Step 1
    In a pot or skillet, heat olive oil, add rice & spices. Simmer for 5 minutes. Add liquid and green chilies, bring up to a boil, reduce heat to simmer, cover & cook approx. 45 min. - 55 min. till tender.
