I know there are several ways for making this recipe but this is how my Mom used to make it. She liked the simple things in life and this is her simple way to make it. I hope you enjoy this as much as we do.

Ingredients

  • 1 cup minute rice
  • 6 slices bacon
  • 1 large onion
  • 2 cans diced tomatoes with juice
  • 1 cup grated cheddar cheese
  • - salt and pepper to tatse
  • 1 can tomato sauce

How To Make spanish rice

  • Step 1
    Cut up bacon and onion, Cook together til bacon gets crispy.Then add rice, tomatoes, tomato sauce, salt, and pepper.Put on simmer for 1 hour or til liquid is absorbed and it thickens. Stir occassionly.Add cheese. You may want to add more pepper at this time. It is really good.
