I know there are several ways for making this recipe but this is how my Mom used to make it. She liked the simple things in life and this is her simple way to make it. I hope you enjoy this as much as we do.
1Cut up bacon and onion, Cook together til bacon gets crispy.Then add rice, tomatoes, tomato sauce, salt, and pepper.Put on simmer for 1 hour or til liquid is absorbed and it thickens. Stir occassionly.Add cheese. You may want to add more pepper at this time. It is really good.
