This is my version of spanish rice.

Ingredients

  • - red bell pepper
  • - onion
  • - garlic
  • - dried basil
  • - dried rosemary
  • - olive oil, extra virgin
  • - rice
  • - water (or chicken broth)
  • - salt and pepper

How To Make spanish rice

  • Step 1
    In a skillet add 2 tablespoons of olive oil and cook 1/2 cup chopped red bell pepper, 2 onions chopped, 1-2 cloves or garlic minced, 1/2 teaspoon dried basil, 1/2 teaspoon dried rosemary crushed. Cook until all the vegetables are tender. Stir in 2 cups of water (or chicken broth) 1 cup of rice 1 can of diced tomatoes drained, 1 teaspoon of salt and 1/8 teaspoon white or black pepper. Bring to a boil and cook covered over low heat until rice is done (about 20 minutes) Makes 4 large servings or 6 small servings.
