spanish brown rice
This is meant to be a side dish, however, I like to use this as a base recipe and add some cooked chopped chicken to it, then have it for a light lunch. Good to take to work for lunch, right? Add a side salad and you've got a fabulous little lunch for yourself!

Ingredients
- 3/4 cup uncooked brown rice
- 1/2 cup sliced, fresh mushrooms
- 1/2 - red bell pepper, chopped
- 1/2 - onion, chopped
- 1/2 teaspoon garlic powder
- 1 tablespoon butter or margarine
- 1 cup chopped tomato (if using canned diced tomatoes, drain first)
- 1 tablespoon dried parsley
- 1 tablespoon soy sauce
- - pepper, to taste
How To Make spanish brown rice

Step 1Cook brown rice according to package directions. Set aside.

Step 2Sauté mushrooms, red peppers, onion and garlic powder in butter in a large skillet for 5-7 minutes or until vegetables are tender.

Step 3Stir in the rice and remaining ingredients.

Step 4Cook until thoroughly heated through.
