Ingredients

  • 2 tablespoons vegetable oil, divided
  • 1 - egg, slightly beaten
  • - ground black pepper, to taste
  • 1/2 cup chopped spam
  • 1 clove garlic, peeled and minced
  • 1 1/2 cups cooked rice, cold
  • 1 tablespoon soy sauce, or more to taste
  • 1/3 cup cooked vegetables (peas, diced carrots, corn, etc)
  • 2 - green onions, thinly sliced

How To Make spam fried rice for 2

  • Step 1
    Heat 1 tablespoon oil in a large skillet or wok on high heat. Add egg, salt and pepper and lightly scramble. Remove to a plate.
  • Step 2
    Add remaining oil to pan. When hot, add Spam and garlic and cook until lightly brown-DO NOT BURN GARLIC!
  • Step 3
    Add rice (break up any chunks first). Stir in soy sauce and keep stirring until rice is heated through.
  • Step 4
    Add cooked vegetables, green onions, and cooked eggs. Heat through and serve.
