Spam Fried Rice for 2
2 Tbspvegetable oil, divided
1egg, slightly beaten
·ground black pepper, to taste
1/2 cchopped spam
1 clovegarlic, peeled and minced
1 1/2 ccooked rice, cold
1 Tbspsoy sauce, or more to taste
1/3 ccooked vegetables (peas, diced carrots, corn, etc)
2green onions, thinly sliced
How to Make Spam Fried Rice for 2
- Heat 1 tablespoon oil in a large skillet or wok on high heat. Add egg, salt and pepper and lightly scramble. Remove to a plate.
- Add remaining oil to pan. When hot, add Spam and garlic and cook until lightly brown-DO NOT BURN GARLIC!
- Add rice (break up any chunks first). Stir in soy sauce and keep stirring until rice is heated through.
- Add cooked vegetables, green onions, and cooked eggs. Heat through and serve.
