Ingredients
- 2 tablespoons vegetable oil, divided
- 1 - egg, slightly beaten
- - ground black pepper, to taste
- 1/2 cup chopped spam
- 1 clove garlic, peeled and minced
- 1 1/2 cups cooked rice, cold
- 1 tablespoon soy sauce, or more to taste
- 1/3 cup cooked vegetables (peas, diced carrots, corn, etc)
- 2 - green onions, thinly sliced
How To Make spam fried rice for 2

Step 1Heat 1 tablespoon oil in a large skillet or wok on high heat. Add egg, salt and pepper and lightly scramble. Remove to a plate.

Step 2Add remaining oil to pan. When hot, add Spam and garlic and cook until lightly brown-DO NOT BURN GARLIC!

Step 3Add rice (break up any chunks first). Stir in soy sauce and keep stirring until rice is heated through.

Step 4Add cooked vegetables, green onions, and cooked eggs. Heat through and serve.
