southwest rice w/ tomatoes & black beans

I've been making this rice/bean dish for years and we still enjoy it today.

Ingredients

  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon jalapeno pepper, finely chopped
  • 1 can 14.5 oz. can petite diced tomatoes
  • 16 ounces chicken broth
  • 1 cup long grain rice
  • 2 teaspoons oregano (or more to taste)
  • 1/2 cup cilantro leaves
  • 1 can black beans, rinsed and drained

How To Make southwest rice w/ tomatoes & black beans

  • Step 1
    In olive oil, saute garlic, jalapeno and rice for 1-2 minutes - do not brown garlic.
  • Step 2
    Add tomatoes and chicken broth and bring to a boil.
  • Step 3
    Lower heat and cover. When rice is done, add oregano, cilantro leaves and black beans. Heat through and serve warm.
