Ingredients
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon jalapeno pepper, finely chopped
- 1 can 14.5 oz. can petite diced tomatoes
- 16 ounces chicken broth
- 1 cup long grain rice
- 2 teaspoons oregano (or more to taste)
- 1/2 cup cilantro leaves
- 1 can black beans, rinsed and drained
How To Make southwest rice w/ tomatoes & black beans

Step 1In olive oil, saute garlic, jalapeno and rice for 1-2 minutes - do not brown garlic.

Step 2Add tomatoes and chicken broth and bring to a boil.

Step 3Lower heat and cover. When rice is done, add oregano, cilantro leaves and black beans. Heat through and serve warm.
